About this Whisky Cellar release

The Whisky Cellar’s Private Cellars Selection brings us this 8-year-old single malt from Jura, one of Scotland’s most remote island distilleries. Jura is famed for producing a softer, lighter island style of whisky, often with gentle smoke and coastal nuances. This particular release has been finished in small oloroso sherry octaves, which are casks much smaller than the traditional butt or hogshead. Their compact size means a greater surface area of wood to spirit, accelerating the influence of rich, nutty sherry character while still allowing Jura’s delicate, honeyed spirit to shine.

On the nose, the whisky offers cloves, sultanas, and a touch of peppermint freshness. The palate develops into fried apricots, honey flapjacks, and a subtle oak smoke, creating a balance between sweet sherry richness and island character. The finish is warming, spiced, and gently smoky, lingering with layers of fruit and malt.

With only 181 bottles drawn at 52.5% and bottled without chill filtration or added colour, this is a rare chance to taste Jura through a different lens, one where oloroso sherry octaves add boldness and depth to the island’s typically restrained spirit.

Meet The Founder

Keith Bonnington

Keith Bonnington has over two decades of experience in the whisky industry, including 11 years at Edrington. He was made Keeper of the Quaich in 2013, and founded The Whisky Cellar in 2016.

His main collection of whiskies is indeed called The Whisky Cellar. These are single cask whiskies bottled all natural, having been through careful review by Keith's tasting panel which has an incredible 200 years of experience between them.

Keith also has a few other excellent labels. There's Brig O'Perth, a historic brand producing highland style blended malts. Easy Sipper, a range of easy-drinking single grain whiskies. And Pintail, a vintage collection of diverse spirits including whisky, sherry and port.
