Nose: Big apples that would make NYC jealous. Pear tarte tatin dumped under enough icing sugar to cancel school for the day. Honeycomb, malt biscuits and a gentle waxy note drifting about like a beekeeper who’s wandered into a bakery and started negotiating with the croissants.
Palate: Thick, chewy malt doing cannonballs into a pool of floral honey. Baked apples and poached pears immediately follow, causing big enough splash that would give any Irishman immediate Kiwi citizenship.
Finish: Long, warm and gently peppery. Honeyed malt and lemon zest hanging around like the last people In the bar asking for another drink when the chairs are on the table... (don’t be that person).
About this Cut Your Wolf Loose release
This 15-year-old Irish single malt from Cut Your Wolf Loose, led by Seb Woolf, is as much a story as it is a whisky - a mischievous, characterful release that very nearly didn’t make it into the bottle.
Distilled on 29 January 2002 and bottled on 10 September 2025, this single malt spent its life maturing in a bourbon hogshead, developing a classic, fruit-forward Irish profile with plenty of texture and depth. Its journey, however, was anything but straightforward. When the cask arrived in Scotland, it briefly fell foul of regulatory scrutiny - ageing Irish whiskey on Scottish soil being something of a grey area. Thankfully, common sense prevailed, and this wonderfully expressive cask avoided an untimely end.
The whisky itself is pure charm. Matured in American oak, it leans into orchard fruit, honeyed malt, and gentle waxiness - hallmarks of well-aged Irish single malt. The bourbon cask influence adds vanilla sweetness and structure without distracting from the distillate’s natural elegance.
On the nose, it opens with big, ripe apples and pear tarte tatin, dusted in icing sugar, alongside honeycomb, malt biscuits, and a soft waxy note that adds depth. The palate is rich and chewy, with honeyed malt at its core, followed by baked apples and poached pears in generous, mouth-filling waves. The finish is long, warm, and gently peppery, with honeyed malt and lemon zest lingering in a relaxed, satisfying fade.
Bottled at cask strength (56.9% ABV), with natural colour and without chill filtration, this is a whisky that balances intensity with approachability. The talented Three Dogs handled the artwork for this bottling, delivering something appropriately mischievous for this “Cooool-ly” bottled whiskey that technically wasn’t supposed to exist here in the first place.
A playful, fruit-laden Irish malt with a rebellious backstory: full of personality, and all the better for having narrowly escaped the drain.
