Caol Ila Tasting Notes

Selim's tasting notes:

Nose: Rhubarb pie, fresh almonds, juniper berries, custard.

Palate: Cappuccino, ginger and some green peppers; a touch of jasmine tea.

Finish: Long and sharp, mineral and lemon curd.

Ed's tasting notes:

Colour: Natural colour; light to medium straw. Oily in my copita, leaving a high tide mark in my glass, with tears that develop slowly.

Nose: Peat smoke and ocean spray. A minerality, like pebbels on the beach, with floral notes. Lemon and almond pastry tart, with vanilla cream and a light dusting of icing sugar.

Palate: Medium mouthfeel. Gentle peat smoke. Apples and citrus, more lemons. Milk chocolate with a latte. A hint of peppery warmth.

Finish: Medium to long finish. Gently warming spice and Islay minerality.

About this Chapter 7 x TopWhiskies collaboration

With less prominent smoke than some of its Islay neighbours, Caol Ila whisky is different from its neighbours. Its mashing, fermentation regime, stills and cut points are unique and it produces a fruity malt that is likeable even for those who don't like peat at first.

This particular cask comes from a refill bourbon hogshead. We've cut this whisky to 51.4% alcohol by volume where we think it performs best and lets out all the aromas.
