Whisky Tasting Notes

Selim's tasting notes

Nose: Barley syrup, ripe apples, mirabelle prunes, mangos, honey pollen, fresh hazelnuts. 

Palate: Waxy minerals, grapefruits, rhubarb, drops of barley and ideas of peat smoke.

Finish: Grassy, pretty waxy, fruit peelings.

Ed's tasting notes

Nose: Soft, sweet malt, with a cereal background. Maple syrup soaked almond sponge. Vanilla and gentle wood spice, ginger and cinnamon.

Palate: Full, velvety, mouthfeel. Warm spice apple cider. Fruit and cream. Vanilla and oak.

Finish: Medium to long. Malt, and a minerality. Gently warming.

About Chapter 7 Whisky's Tormore 31 Year Old 

Tormore is a relatively recent distillery with its impressive buildings located in Grantown-on-Spey in Speyside, and belongs to Chivas Brothers. Although it began to be bottled as a single malt soon after it became part of the Chivas Brothers portfolio, it has never received significant backing, although two bottlings specifically for the French market in 2014 suggests that this may change.

Chapter 7 Whisky has already bottled a Tormore 17 year old that received a Liquid Gold Award from the Whisky Bible back in 2017. This cask is significant as it is the oldest single malt they've ever bottled. It is from a first fill bourbon barrel and they have managed to squeeze only 239 bottles from this magnificent cask.

Meet The Founder

Selim Evin

Selim Evin's love affair with whisky began as a teenager when he accompanied his grandfather on a trip to Scotland. Visiting various distilleries, he was fascinated by both the art of whisky making and the stories behind the whiskies. This early experience left an indelible mark on him, igniting a passion that would later earn him the nickname "Malt Chaser."

In 2013, he made the bold decision to leave a successful business behind and pursue his true calling. He founded Chapter 7, an independent bottler that combined his passion for whisky with his love for literature. The name "Chapter 7" was inspired by the seven ages of man from Shakespeare's works. It symbolises the stages of life that whisky goes through, each stage telling a different story.
