Chapter 7 Tormore 31 Year Old, Review and Tasting Notes

Today I'm reviewing a bit of a treat from independent bottler Chapter 7 Whisky. It's a single cask Tormore 31 year old, the oldest single malt bottled thus far by Chapter 7. It was distilled way back in 1990, aged in a first fill bourbon barrel, and then bottled at 50.2% in 2021. The outturn was limited to just 239 bottles.

This is the second Tormore Chapter 7 have bottled. The first was a 17 year old that received a Liquid Gold Award from the Whisky Bible back in 2017. This release has followed in the footsteps of the previous. Another Liquid Gold Award, with a very impressive 94.5 points. I'm intrigued to try this dram. 

Tormore 31 Tasting Notes

Colour: Natural colour, pale gold. Viscous in the glass with thick oily legs.

Nose: Soft, sweet malt, with a cereal background. Maple syrup soaked almond sponge. Vanilla and gentle wood spice, ginger and cinnamon.

Palate: Full, velvety, mouthfeel. Warm spiced apple cider. Fruit and cream. Vanilla and oak.

Finish: Medium to long. Malt, and a minerality. Gently warming.

Review of this Chapter 7 whisky

This is a delicious whisky. After 31 years in a first fill ex bourbon it is refined and elegant. But it still has a vibrancy, with a welcome warming spice. I really enjoyed that magic trick, exceptionally well aged - yet still with a youthful vibrancy. And the classic bourbon cask, while it has left its mark after three decades, still lets the quality of the spirit shine through. An excellent cask pick by Selim at Chapter 7, and a real treat of a whisky.
